How every Wild olive board is made

Two years of drying, then a day of cutting, sanding and oiling for every board.

  1. Seasoned

    Wild olive cleared from Adelaide Hills reserves is sawn into slabs and dried slowly for two years.

  2. Marked out

    Each board is drawn by hand to follow the grain, then cut on the bandsaw.

  3. Oiled

    Sanded smooth and oiled three times with food-safe oil and beeswax.

  4. Finished

    Fitted with a leather loop, checked and signed off by Theo.

Wild olives are a weed in the hills, so the parks clear them, and most of that timber used to be burnt. Olive is dense and the grain is wild. I mark each board out by hand so the best of it runs down the middle.

Will my board look like the photograph?

No two boards are alike. Olive wood has a wild, swirling grain, so yours will have its own pattern of dark and light. The shape and size stay the same.

How do I look after it?

Hand wash in warm soapy water, never soak it, and dry it standing up. Rub in a little board oil once a month, or when it starts to look pale.

Can I cut on it?

Yes. Olive is a dense, hard wood that takes a knife well. Knife marks are part of a board in use, and oil hides most of them.

Why wild olive?

Olive trees spread into Adelaide Hills bushland, where they crowd out native plants, so reserves clear them. Theo collects the timber that would otherwise be burnt.
